GRAVY & GRACE
1 large box fresh mushrooms
1 stick unsalted butter
1 cup sweet onion, chopped
1/4 cup flour (*GF if desired)
1 teaspoon salt
Black pepper, fresh and ground
2 cups chicken stock
1-2 tablespoons cognac
1-2 tablespoons heavy cream
Cook butter and onion on low heat for 12-15 minutes. Sprinkle in flour, whisk, and add salt and pepper. Cook for 2-3 minutes. Add HOT chicken stock and cognac. Cook uncovered for 5 minutes. Add cream. Serve.
