SHIRENE’S SWEET POTATO CASSEROLE
6 sweet potatoes
1 cup sugar*
2 eggs
1 teaspoon vanilla
1/3 cup milk*
1/2 cup butter*
1/3 cup brown sugar*
1/3 cup chopped walnuts
2 tablespoons all-purpose flour*
2 tablespoons butter*
Cook potatoes in 350 degree oven until done. Remove skins and mash in large bowl. Combine with next 5 ingredients. Beat with mixer at medium speed until mixture is smooth and spoon into greased 9×13 dish.
Combine brown sugar, walnuts, flour, and butter. Sprinkle over casserole. Bake at 350 degrees for 30 minutes.
Freezes well!
*gluten-free flour, ghee, coconut milk, and monk fruit may be substituted for dairy-free, GF, sugar free options.
